A super easy dish I made over this hectic turkey making Christmas day.
2 x persimmons (sharon fruit) thinly sliced, place on plate like how you place ceviche.
some gorgonzola cheese, hand break to small chunks
pomegranate seeds, you can add as much as you like.
Dressing: drizzle of orange juice, extra virgin olive oil, pinch of salt & tiny pinch of pepper, mix well, and add on top of the persimmons.
The taste of gorgonzola and persimmon combined is so wonderful, I did not have walnuts otherwise I may add some too.
